An English sparkling wine. After years of making wine in France, Hugo has returned to his family’s organic farm in Wiltshire and turned part of it over to classic Champagne varietals. His wines are made from organic and biodynamic grapes, with over 20 different types of clover, herbs and legumes planted in between the vines to ensure maximum biodiversity (and, in the winter, a tasty diet for Hugo’s organic sheep!). The result is truly stellar and, using only wild native yeasts and no additives, as ‘wild’ as wine gets.
